Pastries & Breads you can get excited about.

I admit I have a major sweet tooth. But I can’t eat sugar all the time for health reasons, so I made sure to create pastries that I’d immensely enjoy every now and then and feel incredibly satisfied with. That’s why my pastries are made with high fat European style butter, a good blend of spices, fresh local fruit and an interesting range of flours.

The breads I make are based on traditional styles that have been around for hundreds of years. Good sourdough bread takes time to make. That’s why all my breads need advance notice so they can slow ferment and make the wheat more digestible as well as provide more nutrients to us.

I also make Viennoiserie pastries with a classic French brioche dough. Brioche is a highly enriched bread dough made with high amounts of butter and eggs which makes the bread extra tender and rich.

I have been working in the food industry for 8+ years and the one thing that drives my passion within this industry is sustainability. I strive to make the best choices to source my ingredients. Not second best, not third best. But THE BEST. I get fresh, local, organic, sustainably grown and fair trade ingredients so not only do my pastries & breads taste better, are more nutritious, but I also get the satisfaction of knowing I did my part in not changing our Earth’s climate drastically.

I have a valid Cottage Food Operator permit from Santa Clara County Health & Environment Department along with a business license from Santa Clara City. I also have a Selling permit from the state of California. I have completed a Food Handler’s Safety Training from an ANSI accredited program certificate issuer. I have also taken multiple food safety courses over the last 8 years during my various jobs in the Food Industry, including but not limited to a Kitchen Managers Food & Safety training which is much more stringent and exacting in its demands. I have also finished & procured Santa Clara County’s Covid-19 Protocol Training Certificate for the safety of my customers. All this to say, you know you are in good hands!
